Namaskar. Welcome to nishamadhulika.com. Today we will make Party style Aloo Gobhi sabzi. As in the parties the cooks fry the veggies, and prepare sabzi separately and mix. We will not deep fry the gobhi aloo, but our sabzi will be as delicious, as the deep fried ones. We will make it differently. To make sabzi here we have 3 peeled potatoes, kept in water, cut it. Do not cut potatoes into too small pieces, as they turn soft too quick and sabzi doesn’t taste good. Turn on flame, heat a pan, Here are 300 gms cauliflower florets, washed well. Put 2 to 3 tsp oil in wok to heat . Add 1/4 tsp cumin seeds and slightly roast, Now add potatoes, cauliflower. Add 1/2 tsp salt, 1/4 tsp turmeric powder, Stir the spices and roast the sabzi for 2 minutes. The spices have mixed well with the sabzi. Cover and cook it for 5 minutes then stir it. Keep flame minimum to prevent browning. We have not added water to the sabzi, cook it in the steam itself. Till the sabzi is cooked, place another wok to heat to prepare masala. Put 2 tbsp oil in wok to heat, oil is suffeciently hot add 1/4 tsp cumin seeds, reduce flame to minimum, to prevent browning. Add 1/2 pinch asafoetida, take some whole spices, such as 2 bay leaves, 1 cinnamon stick, 4 cloves and 10 to 12 black pepper. Slightly roast the spices. Take 2 tomatoes, 1/2 inch ginger baton, 2 green chilies, make paste from it. Add paste to the masala. Add 1/4 tsp turmeric powder, 1/2 tsp red chili powder, if you prefer more spicy, then add more red chili. Add 1 tsp coriander powder. Roast the spices, till oil separates from it. 5 minutes have passed stir the sabzi. It is important to stir the sabzi at intervals, to prevent it from sticking at the base of wok. Cover and cook the sabzi again, for 5 minutes on low flame and stir it. Masala is roasted, stir at regular intervals. Check the sabzi. With texture you can see the veggies are cooked. Press it with ladle, they are pressed well. Potatoes have turned soft, cauliflower is crunchy soft. Press it and check. Potatoes and cauliflower are cooked, it took 20 minutes to do so. We checked it 4 times for every 5 minute interval. Oil has separated from the masala, it is aromatic too. The color of masala has turned out good. Add 1/2 cup water to it. If you wish to make the sabzi more watery, then you can add 1 cup water. Add more than 1/2 tsp salt, add 1/2 inch ginger juliennes, take less than 1/4 tsp garam masala, as we have also added whole garam masala. Add some green coriander and mix it. Masala has boiled well. Pour the masala and mix with the sabzi. Cover the sabzi and cook on low flame for 4 to 5 minutes. 4 minutes have passed. Sabzi is cooked and ready. It took 25 minutes to make this sabzi. Take out the sabzi in a bowl. Gobhi Aloo party style sabzi is ready, it is really delicious and can be prepared easily. Garnish the sabzi with some green coriander, You can serve this sabzi with chapati, paratha, naan or rice. This quantity is suffecient for 3 to 4 members.
