Hi friends, welcome to Anjis Kitchen As I said in my previous video, I am sharing the recipe of mutton curry kerala style in this video I have prepared this mutton curry as a side dish for ghee rice This is a semi-gravy type of recipe If you want, you can cook this in pressure cooker. Here I am cooking this in a pan. We felt that it is more tastier if pan cooked than pressure cooked Ingredients for the preparation of this mutton curry is added beneath the video I have taken 1 kg of tender mutton pieces. Cleaned and water drained off completely For making the mutton curry, heat the pan and add 2 1/2 tbsp of cooking oil(Coconut oil) and heat it To this add 2 tsp of fenu greek seeds and allow to splutter. This will enhance the flavor and taste of the gravy It is time to add chopped ginger and garlic to this and saute it until the rawness goes off It is time to add diced onions and shallots and saute it well Even though the dice size is big, onions will be cooked once the mutton is ready and the gravy will be thick and tasty too Usually in traditional preparations, we add both onions and shallots together to get the correct taste To this add some salt and saute it well. This will enhance the speed of cooking onions Saute the onions until they are translucent or glossy Now it is time to add tomatoes and green chillies. Chilli amount can be adjusted as per your taste Saute this well and close the contents with a lid and cook for 3 to 5 minutes in low to medium flame Make sure that the tomatoes are completely cooked and mashed with onions I am going to add the spices and powders one by one. First I am adding turmeric powder Saute it well until its rawness goes off. When we add powders, make sure that the flame is brought down to low to medium flame. Otherwise the powders will get the burnt flavour Next I am adding 3 heaped table spoons of coriander powder and saute it well until its rawness goes off Now I will bring down the flame to simmer and then will be adding 3 heaped table spoons of kashmiri chilli powder and saute it well Kashmiri chilli powder will give rich color and less spiciness to the gravy. You can adjust the chilli content as per your taste Next I am adding 1 heaped teaspoon of freshly ground pepper powder To this add 1 tsp of cardamom powder, 1 1/2 tsp of garam masala (freshly roasted and ground cinnamon, cloves and star anees) and 2 tsp of fennel seeds powder Saute it well Now it is time to add the cleaned mutton and mix the contents well If you want to marinate the mutton, then add half the quantity of all powders to mutton and mix it well. Keep it aside for half an hour Here I am not marinating mutton as I am going to cook mutton in low to medium flame and all masalas will be infused in mutton Mix mutton and onion masala well Now I will be adding 3 springs of curry leaves. In total I will use 5 springs of curry leaves Now close the pan with a lid and cook mutton in low to medium flame for 10 minutes Post 10 minutes, you can see water getting oozed out of mutton. Now mix the contents and again close with lid and cook for another 10 minutes Now we can see that there is more water in the pan oozed out of mutton pieces Add half cup of water to mutton gravy. As informed I am preparing a semi-gravy mutton curry. Mix the contents well, add some salt and pepper powder to adjust the taste. Close it with lid and cook for another 10 minutes Open the lid and then mix the contents well. Adjust salt and pepper powder if required. Add remaining curry leaves and mix it Now we can see that the gravy is enough thick and is giving a light coating for the pieces Total cooking time post adding mutton is 30 to 35 minutes. Mem, ചെയ്യുന്നതാണ്. പക്ഷേ (1) quantity of water ((2) വേവ് സമയം ( cooking time) (3) curry leaves (4) Garam Masala/mutton masala / somp ( പെരും ജീരകം)/ (Kashmiri / actually Andhra) Mirchi/ – quantity varies from person to person. Even brand / type/ quality of oil, mainly I forgot to say the heat level of frying are main important factors. I liked your way presentation and no harm except cooking time. Washing/ cleaning time told is perfect 3 to 4 times. Thanks madam. Keep on posting . Me and wife
