Hello, I am Madhura and welcome to MadhurasRecipe Marathi Let’s see how to make matar paneer today. This is very easy and simple recipe. Let’s begin with how to make masala or vatan for this. Heat up 1 tsp oil in a pan. Add 4 medium size chopped onions and fry until it gets light golden colour. Generally when I make any gravy for nonveg, I use only onion and coconut. When I make paneer based or vegetarian gravy, then I also use tomato in that. Like chole, paneer or mushroom gravy. After frying onion for about 2 minutes, then add 5-6 garlic cloves and a few ginger pieces. You can share this video on whatsapp with friends. You can share on facebook, twitter, instagram pintrest. After frying onion for 5-6 minutes, It will begin to turn light golden. Add 1 medium size chopped tomato. Mix well. Cover and cook. Tomato should be soft and mash with onion. I have cooked onion and tomato for 3-4 minutes. Now turn off the gas. Wow.. Tomatoes have become nice and soft and are almost mashed with onion. Let’s transfer this into blender pot and make smooth gravy. Don’t add much water while blending. Add minimum water while blending. Vatan is ready. It is smooth. I haven’t added any water while blending. Heat up a pan and add 2 tsp butter. In restaurant they use butter only for any paneer based dish. You can use oil if you want. Add blended masala in it. Mix well and fry on medium heat for about 3-4 minutes. I have fried matar paneer masala in butter for about 5-6 minutes really good. Oil has begun to release from sides. I added 2 tsp more butter while frying this masala. The more you add butter the more tasty matar paneer is. It will taste restaurant style. The gravy is nice silky and smooth. It is not spilling while frying. This is the reason why I didn’t add any water while blending. Gravy gets nice texture if you add less water. Let’s add spices. Add 1 tbsp coriander powder, 1 tbsp kitchen king masala. I am using store bought kichen king masala. You can use matar paneer masala or butter paneer masala or any masala instead of kichen king masala. Red chili powder for colour. I buy bedagi mirachi and grind it form mill. You can use kashmiri chili powder instead of this. Fry for 3-4 minutes more really good. I have fried this masala for about 6-7 minutes nicely. Masala has become dry and it is releasing oil. Add a little water. I don’t want too thin sabzi. Wow.. You can see texture. The gravy has got restaurant style texture. Add salt to taste. As we have added tomato, you can add sugar if you want. To reduce sourness of tomatoes. Cover and cook gravy for another 5 minutes. Important thing, I am using frozen matar now. As frozen matar is cooked, there is no need to cook it. So I will add matar and paneer together at end and cook for just 5 minutes. If you are using fresh matar, you will have to add matar after adding water and cook for 10 minutes. It takes a little longer to cook fresh matar. So add matar immediately after adding salt and water. Cover and cook matar for 10-15 minutes really good and add paneer in the end. Do not cook gravy longer after adding paneer as paneer becomes rubbery due to it. It becomes chewy and hard. To avoid this cook paneer for just 3-4 minutes after adding to gravy. Do not cook for longer time than this. I have cooked the gravy covered for another 5 minutes. Wow.. It has got fantastic texture. Add 250 gm paneer. Wash paneer really good after buying. And then cut it. Add 1/2 katori frozen matar. Mix well. Cover and cook for another 3-4 minutes. I have covered and cooked matar paneer for another 5 minutes. Let’s check now. Aroma is tempting. This matar paneer is looking really yummy. It has got perfect hotel like colour, texture. Turn off the gas. Wow.. It is mouth watering. Matar paneer goes well with naan.
